Studying while packing, brainstorming for the blog, preparing all the documents needed before leaving and a tons of other things, is NOT a good strategy to remember what you just read.

Baked Pear and Pomegranate seeds Oatmeal

1/2 cup oats

1 uber-ripe pear,

mashed except for three slices

1/2 cup soy milk

Cinnamon

Sliced almonds

Pomegranate seeds to garnish

Pour all the mixed ingredients (except the pomegranate seeds, the pear slices and the almonds) in a mini casserole. Garnish with the pear slices and the almonds. Bake in the oven for 25/28 minutes. Sprinkle with some pomegranate seeds (they are endless!!).

I didn’t add sugar nor maple syrup because the pear was really ripe (I could easily mash it with a fork); so maybe if you use for not-so-ripe pears a little sugar is needed!
